In fact, raw ginger and dried ginger both come from the same plant and the same part, so what is the difference between them?

During the cultivation process of ginger, it is necessary to add soil and bury it every few days. Since it is a rhizome, rhizomes tend to attract light, so the more it is buried, the more the ginger will grow upwards to get sunlight. The result of doing this is that the ginger will grow longer and longer and bigger.

We went to the market to buy ginger. The fresh ginger was quite big, with very little fiber inside. It was very tender and crisp, and it would shrink when exposed to the sun.

Dried ginger is different. No soil is used during the cultivation process, so it is smaller in size. Its internal ingredients accumulate and settle more, making it heavier in texture. Even when exposed to the sun, it does not shrink much.

This product is made from the dried old roots of ginger. The dried ginger is blanched until it swells up and has a brown surface, or is fried until it becomes charcoal and is black on the outside and brown on the inside.
